I went to the farmers market Sunday and bought all sorts of great veggies, as well as some really fresh fish. Fresh, local produce is one of the reasons I love summer.
Here's a very easy recipe using carrots.
Carrot Salad
1/2 lb carrots, peeled
2 tbsp extra-virgin olive oil
2 tbsp fresh lemon juice
1 garlic clove, finely diced
1/4 tsp kosher salt

Coarsely grate carrots using a box grater, mandoline, or food processor. Combine with remaining ingredients, toss to coat. Serve at room temp or chilled. Serves 4.
You can also add 1 tbsp chopped fresh mint, but I don't like mint and it was great without. Very quick to make. The hardest thing was not grating my fingers in along with the carrots...

Farmer's markets are fun and a great place to learn about diffferent varieties of fruits, veggies and how to grow and care for them. Sometimes vendors have great recipies to give out too. Best of all, I am able to support the local farms.
