Another warm breakfast favourite for winter!
High in fiber, oats are one of my favourite ways to start the day. Here's a recipe for one of my favourite oat combinations, Applesauce Oatmeal for One.
Ingredients:
* 1/3 cup rolled oats
* 1/2 cup water
* 1/3 cup unsweetened Almond Breeze (or other almond milk)
* 1/4 cup unsweetened apple sauce1/2 tsp cinnamon
* 1 tsp vanilla
* 1 packet stevia
* Optional toppings: 1 medjool date, pitted and chopped
In a saucepan combine oats, water, and almond milk. Cook for a few minutes on the stove until the mixture thickens, then add in the apple sauce, cinnamon, vanilla, and stevia. Cook for 1 minute more on low heat, stirring constantly. Stir in half of the date pieces, then put the oatmeal into a bowl. Top with remaining date pieces and add other toppings such as apples and walnuts if desired. Serve immediately.
Serves 1.
Nutrition per serving (including the chopped date): 206 calories, 3g fat, 0g saturated fat, 0mg cholesterol, 70mg sodium, 43g carbs, 5g fiber, 21g sugar, 4g protein.
Angela, this sounds delicious and healthy- perfect for a snowy day like we are having here today.
When I'm really in a hurry, I've also put rolled oats with various ingredients in a soup mug in the microwave for 2 minutes. Helps me start the day healthy and get to work on time.
