FitMom is a mother of two very active boys. She has been an athlete her entire adult life and as an athlete has pursued marathon running, bike races, triathlon, yoga and is currently an avid crossfitter.

Satisfy Your Sweet Tooth with a "Caveman Cookie"
The first day of November marked a change in our families eating habits. We have eliminated sugar, dairy, alcohol, and grains from our diet completely. Our children are still eating grains and sugar, but, we are tying to limit that as well. The reason we decided to do go this extreme was namely for the sake of performance. Both of us would love to be "at the top of our game" by December 1st and we've been assured that this type of diet is the best suited for athletes. (Please refer to RobbWolf.com for details)
However, we still both enjoy the sweet stuff, and for a special treat, we found these Caveman Cookies to really deliver in terms of sweetness without blowing our diet.
Carrot Cake Caveman Cookies
2 cups of carrots
2 cups of almonds (or cashews)
1 cup unsweetened coconut
1 tsp nutmeg
1 teaspoon vanilla
2 teaspoons of olive oil or coconut oil
3 eggs
Combine all ingredients in a food processor, then add the eggs. Form into "patties" and place on a baking sheet. Bake at 350 until done.
I also added golden raisins to the mix and found that extra bit of sweetness added to the recipe.
